Quinoa (keen-wah) has been cultivated for over 5,000 years and came from South America.
Although classified as a grain it is actually the fruit of the Goosefoot plant. It is a small, round grain and is used in everything from breakfast cereal, soups, stews, salads and bread.

Black quinoa is slightly more fibrous in texture than white quinoa and is crunchier when cooked. To prepare, rinse thoroughly under running water before cooking. Then, add 1 part quinoa to 2 parts water or stock, bring to the boil, then cover and simmer for 15 minutes.
