How do you use unroasted buckwheat?
Unroasted buckwheat is often used a side dish, similar to quinoa or cous cous, it will pick up incorporated flavours.
It’s also commonly used for porridge. For Kasha - the original roasted buckwheat version, simply toast the buckwheat in a skillet for 4-5 minutes first.
How do you cook buckwheat?
It’s often advised to be soaked prior to cooking to reduce phytic acid, but it’s not essential if you haven’t time.
Rinse and drain buckwheat well.
In a medium sauce pan, combine 240 grams (1 cup) buckwheat with 440ml of water (1 ¾ cups), 1 tablespoon butter and 1/2 teaspoon salt. Bring to a simmer then cover with a tight fitting lid and simmer on low for 18-20 min.
